Cáceres 2031 Holds a training session in Plasencia on Sensory Gastronomy and Food Inclusion with Chilean specialist Alexander Calsow

Cáceres 2031 continues its training program with a new event dedicated to innovation and inclusion through gastronomy. This Friday, November 7, at 7:00 p.m., the Sala Verdugo (Filmoteca) in Plasencia will host the talk “32 Steps Before Eating – Sensory Gastronomy and Food Inclusion,” given by Chilean specialist Alexander Calsow, an expert in applied neurogastronomy and sensory education.

The session, organized in collaboration with the Plasencia City Council, through the Department of Sports, Inclusion, and Diversity, invites reflection on how flavor is not a property of food, but rather a construct of the brain based on the senses, emotions, and memory.

From this perspective, Calsow will address how factors such as the environment, music, and emotional state directly influence the perception of taste and our relationship with food. He will also propose an inclusive approach to eating for neurodivergent individuals, especially those on the autism spectrum, highlighting how sensory difficulties can be transformed into opportunities for learning and emotional connection.

During the talk, the specialist will present the “32 Steps to Eating” methodology, developed by Chilean autistic nutritionist Cecilia Troncoso, an educational process that teaches how to tolerate, smell, touch, and taste food through empathy, respect, and sensory education.

This activity is aimed at educators, cooks, caregivers, and the general public, and seeks to promote a view of food as an emotional and social experience, in which cooking becomes an inclusive language that unites science, art, and well-being.
